Limited harvest – once this batch is gone, it won’t be restocked until next spring.

Gathered from the earliest blossoms of the season, when our Essex colonies begin foraging again after winter across orchards, hedgerows and spring wildflowers. The result is our most delicate honey of the year — pale golden in colour, softly floral, and lighter in character than our summer harvest.

Each batch is extracted gently from our own hives and jarred exactly as the bees made it. Nothing is blended or imported — this is a true single-origin spring harvest, shaped by the first flowers of the year.

Because it’s gathered in small seasonal batches, every year’s flavour is slightly different — a quiet, honest reflection of that particular spring.

Best enjoyed simply: on warm toast, stirred into yoghurt, or straight from the spoon.
